El ma\u00edz desmenuzado al vapor (SFC) se utiliza com\u00fanmente en dietas de engorda porque el desmenuzado al vapor mejora la disponibilidad de almid\u00f3n y la utilizaci\u00f3n de nutrientes, mejorando as\u00ed el valor alimenticio general del ma\u00edz (Zinn et al., 2002). En la mayor\u00eda de las operaciones que utilizan SFC, el grano se procesa hasta obtener una densidad de escamas predeterminada colocando los rollos a una distancia de separaci\u00f3n espec\u00edfica y usando tensi\u00f3n para mantener los rollos juntos. El grano en copos generalmente se produce con una densidad aparente entre 0,31 kg\/L (24 lb\/bu) y 0,41 kg\/L (32 lb\/bu; Owens et al., 1997), con una recomendaci\u00f3n promedio de 0,35 kg\/L (27 lb\/bu) para ma\u00edz (Vasconcelos y Galyean, 2007); sin embargo, la densidad de las hojuelas entre las hojuelas de vapor dentro de un solo molino y entre los lotes de engorda puede variar mucho. La elaboraci\u00f3n de hojuelas a una densidad similar utilizando 2 hojuelas no garantiza una disponibilidad similar de almid\u00f3n (Armbruster, 2006).<\/p>\n<p>El grado de gelatinizaci\u00f3n del almid\u00f3n o la disponibilidad de almid\u00f3n de SFC se puede estimar utilizando procedimientos anal\u00edticos como la hidr\u00f3lisis enzim\u00e1tica, la producci\u00f3n de gas y los m\u00e9todos de gelatinizaci\u00f3n de SFC (Vasconcelos y Galyean, 2007). La evaluaci\u00f3n rutinaria de la disponibilidad de almid\u00f3n se utiliza como m\u00e9todo de control de calidad para estandarizar el proceso de desmenuzado con vapor y garantizar la consistencia de fabricaci\u00f3n dentro del d\u00eda y d\u00eda a d\u00eda. La concentraci\u00f3n de almid\u00f3n f\u00e1cilmente disponible en SFC es indicativa de la tasa de fermentaci\u00f3n del almid\u00f3n en el rumen. Cuando el almid\u00f3n est\u00e1 disponible con demasiada facilidad y se fermenta a un ritmo excesivamente r\u00e1pido, el \u00e1cido puede acumularse en el rumen, reduciendo el pH ruminal y, en \u00faltima instancia, provocando una mayor prevalencia de trastornos digestivos.<\/p>\n<p>Los factores que contribuyen a la variaci\u00f3n entre las operaciones de engorde con respecto a la calidad del SFC incluyen el tipo y las dimensiones del equipo de desmenuzado, el tipo de grano, la variedad de grano y el contenido de humedad, el desgaste de los rodillos y los procedimientos de desmenuzado con vapor. Los procedimientos de muestreo y manipulaci\u00f3n contribuyen a la precisi\u00f3n de los resultados; por lo tanto, los procedimientos de muestreo necesitan atenci\u00f3n especial y se debe evaluar la coherencia al intentar determinar la disponibilidad de almid\u00f3n de SFC.<\/p>\n<p>Los objetivos de este estudio fueron evaluar la disponibilidad de almid\u00f3n de SFC comparando las dimensiones de los rodillos y las densidades de hojuelas de SFC entre sistemas de hojuelas, proporcionar informaci\u00f3n sobre los equipos utilizados y los procedimientos de hojuelas de SFC, y definir las
